Mostly because Everything is Chocolate, hearts and pink. Today I'm posting two recipes. One is for Brownie cupcakes. The other is for Miss Millmans Chocolate frosting. The frosting is excellent....It tastes like fudge. It takes a lot of work to make the frosting, but the end result is worth it. Enjoy!!

Brownie Cupcakes

Makes 12

6 tablespoons unsalted butter
11 ounces best-quality semi-sweet chocolate, coarsely chopped ( I use Bakers chocolate squares)
3 large eggs
1 cup sugar
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa
1/8 teaspoon baking soda
1 cup coarsely chopped walnuts(optional)
Nonstick cooking spray

1. Preheat the oven to 350°. Line a twelve-count muffin tin with cupcake liners, and spray generously with nonstick cooking spray. Set aside.

2. In a saucepan over low heat, melt the butter and 8 ounces of chocolate. Stir until smooth. Remove from heat, and set aside.

3. In a large bowl, whisk together eggs and sugar. Add flour, cocoa, and baking soda. Stir in the melted chocolate until combined. Stir in remaining 3 ounces of chocolate and nuts if desired.

4. Using a 2-ounce ice cream scoop, fill cupcake liners 3/4 full with batter. Bake until a firm crust forms on the cupcakes, about 20 minutes. Remove to a wire rack to cool, about 10 minutes. Remove cupcakes from pan, and continue to cool on a wire rack.

5. Ice cupcakes with a generous amount of chocolate frosting.

Mrs. Milman's Chocolate Frosting

Makes 6 cups
While this frosting is cooling, you'll need to stir it as instructed; otherwise, the frosting around the edge of the bowl will harden and the frosting at the center will remain liquid. The finished frosting should have a consistent texture. Lois Milman, the creator of the frosting, always uses Nestlé morsels and makes only one batch at a time. Spread the icing on Moist Devil's Food Cake as soon as it is sufficiently chilled; it holds its shape well on the cake.

24 ounces Nestlé semisweet chocolate morsels

4 cups whipping cream

1 teaspoon light corn syrup

1. Place chocolate morsels and cream in a heavy saucepan. Cook over low heat, stirring constantly with a rubber spatula, until combined and thickened, between 20 and 25 minutes. Increase the heat to medium low; cook, stirring, 3 minutes more. Remove pan from heat.

2. Stir in corn syrup. Transfer frosting to a large metal bowl. Chill until cool enough to spread, about 2 hours, checking and stirring every 15 to 20 minutes. Use immediately.

For more Chocolate recipes go visist Overwhelmed

Favorite Ingredients Friday

I'm not a big sports fan, and I'll probably be watching Extreme Home makeover on Super bowl Sunday. So, here are so pictures of what i've been up to!

This santa was painted on an old piece of wood, I think it was once used for shipping, because it is addressed like an envelope

Primitive annie, she still needs a mouth!

This angel is being worked on right now, she is going to have some stick legs and a rusty tin halo.

I took a Basket class a few weeks a go, that was fun!! It still needs stained though.

Favorite Ingredient Friday

French vanilla Tiramisu

Prep time: 15 mins.

1. 4 ounces cream cheese, softened

2. 1 1/2 cups cold milk

3. 1 Pkg. This is the recipe my Aunt Merrie always made for Thanksgiving. I've never had green bean casserole with mushroom soup, so i can't compare it. But this recipe is one of my favorites!!!

Green Bean Casserole

1. 3 Tbsp. butter
2. 2 Tbsp. flour
3. 1 tsp. salt
4. 1/4 tsp. pepper
5. 1 cup sour cream
6. small can mushrooms (drained)
7. 2 cans french cut green beans (drained)
8. 1/2 cup grated cheddar cheese
9. french fried onions

Preheat oven to 350. My mother, grandmother and Aunt all worked at Maxines. Maybe Ham BBQs are just a local thing?

Well on to this weeks Recipe. I got this recipe from Taste of home's Simple & delicious magazine. I've made it and it is very good! And if you have kids i'm sure they wouldn't mind eating popcorn chicken!

Sweet-and-sour Popcorn Chicken
total time- 25 mins.

1. 1 green pepper, cut in big chunks

2. 1 small onion, sliced thinly

3. 1 Tbsp. I bought fabric for $4.00 for 1 yard, this made 8 stockings, I topped the stocking with some fluffy fur.

I love primitives so i made these stockings extra grubby looking. To make any fabric look old and dingey make a mixture of coffee, ground cinnamon and a little vanilla extract, brush on your fabric liberally and bake in the oven at 325, but watch it closely so it dosn't catch fire!!

I topped off the stockings with sprigs of greens off of an old wreath ( i sprayed them with adhesive and sprinkled on some micah flakes), some pipe cleaner candy canes, a lollypop made from fabric and a coffe stained american flag.

If anyone would like the pattern and instructions to make these stockings you can e-mail me at sarbaugh3@msn.com

Slow cooking Thursday

I just ordered Sandra Lee's semi-homemade slow cooker cookbook from a book club, I can't wait to get it and try out all the recipes....and of course share them!!

This week my recipe is Ham and Hashbrowns. They were going to throw away this lovely old door....gasp!!!! We were pondering what we were going to do with it. Well we put our heads together and thought it would make a great closet. Since we have no closets in our downstairs it was a very good idea. Here is the end result.

Isn't it great? I am making this Pumpkin Spice cake to go along with the compote. It will be delish!! If you want to make the cake but not the compote i would suggest icing it with a cream cheese icing. If you want to put it in a bunt pan, the cooking time will be longer, but on the back of the cake mix box it will let you know the exact amount of time for a bunt pan. This is BY FAR the best pumpkin cake recipe I've ever eaten (and belive me i've eaten plenty!!) and one of the easiest too!!!

Pumpkin Spice Cake

1 package spice cake mix

1 package instant vanilla pudding mix (3.4 oz)

1 cup canned pumpkin

1/2 cup water

1/2 cup vegetable oil

3 eggs

1 teaspoon cinnamon

1/2 teaspoon ginger

Combine all ingredients on a large mixing bowl, stir until batter is not lumpy. Pour into a greased 9 x 13 pan. Bake at 350 for 45-50 mins. Longer for Bunt pan.

You can make this cake into a sinfully good trifle too!! Just bake the cake as above, cool and cut into cubes.

Mix 2 (3.4 oz) packages of cheesecake instant pudding mix with 2 cups cold milk. Beat for 2 mins. Fold in one container of cool whip and set aside. Layer one third of the cake cubes on the bottom of a trifle dish or glass bowl, top with a layer of pudding. Sprinkle on some chopped pecans and toffe bits and a drizzle of carmel ice cream topping, repeat layers. Pudding should be the top layer. Refrigerate before serving and any leftovers (I doubt it!!)

Enjoy and have a Happy Halloween!

Slow Cooking Thursday

This is my first time participating in Slow Cooking Thursday. The flavors work so well together. When you cut a bite the cheese is all gooey and stringy....yumm!

Cowboy Chicken

4 Boneless skinless chicken breasts
BBQ sauce
12 strips of Bacon (srispy)
8 slices deli swiss cheese
Sauteed onion cut into rings (optional)

Grill chicken Breast with BBQ sauce until juices run Clear. Top each chicken Breast with 3 strips of bacon, onions if you want to add them, and top with swiss cheese.
